Natural Blue Food Coloring with Red Cabbage

Most colors can be created relatively easy with veggies and fruits, but blue always seems to be a problem. When searching on the internet for some solutions I read something about making a natural blue color with red cabbage and baking soda. To me this sounded a bit weird and it did not seem credible to me. But it made me curious so I gave it a shot this week! 

So I have done it this week and it is actually not that hard at all. The lead time for making this blue coloring is somewhat long, but most of this time consists of waiting while your pot is boiling.  Furthermore, for this recipe you only have to use two very cheap ingredients - red cabbage abd baking soda - which gives you about 1/2 cup of blue coloring that you can use for days when you keep it in the fridge!

Finding rice cakes boring? Not at all! Rices cakes are one of my favorite lunch items to eat. They are not only healthy, gluten-free and low in calories, but also very versatile.

You can eat them with all different kinds of toppings - depending on what you like to eat  or the ingredients you have in your fridge and kitchen cabinets at that moment. Therefore they are not only suitable for lunch, but each moment of the day when you want to have a snack.

On a rainy Autumn day like this, one of my favourite meals to start the day is an Apple Pie Oatmeal with a Pumpkin Spice Latte!

Here's how to make the Apple Pie Oatmeal and the Pumpkin Spice Latte. It's so easy, and you'll have enough to get you through the morning. 

For 1 person

Ingredients Apple Pie Oatmeal 
45 grams of oat flakes
200 ml of unsweetened almond milk or some ohter milk you like to use
1 apple, peeled and chopped (save 3 thin slices for decorating if you like)
30 grams of raisins
1 teaspoon of cinnamon
Some honey to taste

1. In a medium sized pot over medium heat, whisk together the oats, apple, cinnamon, milk and some honey if you like until combined.
2. Cook over medium heat for about 9 to 15 minutes, stirring often. When the mixture thickens and the oats soften, it is ready.
3. Pour into a dish and serve with the slices of apple with some cinnamon to top it of.
